200g (7oz) white breadcrumbs
1¼ pt (750ml) milk
1 small onion, studded with 6 cloves
1 bay leaf
20g (¾ oz) butter
Zest of 1 lime
3 tbsp double cream

1) Place onion, bay leaf, butter and milk in saucepan and bring to the boil.
2) Reduce the heat and add the breadcrumbs. Gently simmer for 5-6 minutes before removing from heat.
3) Stir in the lime zest and cream. Season.
4) Allow to sit for 10 minutes. Remove studded onion and bay leaf before serving.
